Recipe: Vegetarian Shepherd’s Pie

Delicious, quick and easy. A low-salt, low-fat meal that’s good alone or with a salad.



  • 3 medium potatoes
  • 1 clove garlic, minced
  • 1 egg, beaten (can be replaced with a flax egg)
  • pinch salt
  • pepper to taste
  • 1 tbs butter


  • Steamed vegetables (whatever’s in seas0n)
  • 1/4 cup wine
  • 1/2 tsp each dill and basil (or 1 tsp curry)
  • grated cheese — cheddar, muenster, mozzarella


Crust: Cook potatoes until soft, then mash together with the rest of the crust ingredients. Spread 1-1/2 inches thick in a greased pie pan. Bake until golden at 350 degrees.

Filling: Put veggies into baked crust. Pour wine on top and add spices. Cover with cheese. Bake 15-20 minutes at 350 degrees until the cheese is melted.
