Recipe: Anita’s Honey Nut Bread


  • 1 cup milk (dairy, cashew, almond, flax, etc.)
  • 1 cup honey (or brown rice syrup, date syrup)
  • 1/4 cup soft butter (or coconut oil)
  • 2 1/2 cups whole wheat flour
  • 2 eggs, beaten (or 2 flax eggs)
  • 1 tsp salt
  • 1 tbs baking powder
  • 1/2 cup walnuts, chopped
  • 1/4 to 1/2 tsp sesame seeds
  • Optional: mashed bananas, sunflower seeds, raisins


Preheat oven to 325 degrees. Combine milk and sweetener in a saucepan and heat until blended, stirring constantly. Do not overheat, remove from stovetop before or as soon as milk and sweetener are well combined. Pour into a bowl and beat in fat (butter or coconut oil), flour, eggs, salt, and baking powder. Fold in nuts gently. Pour into greased loaf pan. Bake for at least one hour. Sprinkle top with seeds of choice halfway through baking. Cool 15 minutes in pan before removing. Enjoy.
