Ingredients
- 1 cup mung beans
- 1 cup brown rice
- 10 cups water
- 2 onions, chopped
- 2 carrots, sliced
- 1 green pepper, chopped
- 1 – 2 stalks celery, sliced
- 1/4 cup oil
- 1 tsp pepper
- 2 tbs turmeric
- 1/2 tsp cayenne
- 1 tbs ground cumin
- 2 tbs ground coriander
- 1 tbs celery seed
- 1 tsp garlic powder
- 2 – 3 tbs tamari
- Swiss cheese, grated
Instructions
Put mung beans, rice and water in heavy saucepan. Cook about forty minutes, until beans split open. Add vegetables and oil and simmer uncovered about twenty minutes. Stir occasionally so that beans don’t burn. Mix the spices together and add along with the tamari. Simmer ten minutes.
To serve, spread on a plate and top with grated cheese. Allow cheese to milk. Serve with pita bread, chapatis, or roti.
